Sauteed Chicken With Scallion Bacon Vinaigrette

1, increase amounts according to needs


  • 1/4 lb
    skinless boneless chicken breast
  • 1 slice
    bacon, cut into 1/2 inch pieces
  • 1/4 tsp
  • 1/8 tsp
    black pepper
  • pinch
  • 2 medium
    scallions, thinly sliced
  • 2 Tbsp
    reduced-sodium chicken broth
  • 2 tsp
    white balsamic vinegar

How to Make Sauteed Chicken With Scallion Bacon Vinaigrette


  1. Place bacon in medium nonstick skillet; set over medium heat. Cook, stirring occasionally, until crisp, 2-3 minutes. With slotted spoon, transfer bacon to plate lined with paper towels and drain. Pour off and discard all but 1/2 tsp of bacon drippings.
  2. Sprinkle chicken with paprika, pepper and salt. Add chicken to same skillet and cook, turning once, until cooked through, about 8 minutes. Transfer the chicken to plate.
  3. To make vinaigrette, add scallions to same skillet; cook, stirring constantly until softened, 1 minute. Add broth and vinegar; bring to boil. Cook, stirring constantly, until liquid is reduced by half, about 1 minute. Stir in bacon. Spoon Vinaigrette over chicken.
  4. Note: White balsamic vinegar is a lighter, sweeter cousin of the more common dark balsamic vinegar. If you don't have any on hand, use white wine vinegar in this recipe.
