Ingredients
- 1/4 pound skinless boneless chicken breast
- 1 slice bacon, cut into 1/2 inch pieces
- 1/4 teaspoon paprika
- 1/8 teaspoon black pepper
- pinch salt
- 2 medium scallions, thinly sliced
- 2 tablespoons reduced-sodium chicken broth
- 2 teaspoons white balsamic vinegar
How To Make sauteed chicken with scallion bacon vinaigrette

Step 1Place bacon in medium nonstick skillet; set over medium heat. Cook, stirring occasionally, until crisp, 2-3 minutes. With slotted spoon, transfer bacon to plate lined with paper towels and drain. Pour off and discard all but 1/2 tsp of bacon drippings.

Step 2Sprinkle chicken with paprika, pepper and salt. Add chicken to same skillet and cook, turning once, until cooked through, about 8 minutes. Transfer the chicken to plate.

Step 3To make vinaigrette, add scallions to same skillet; cook, stirring constantly until softened, 1 minute. Add broth and vinegar; bring to boil. Cook, stirring constantly, until liquid is reduced by half, about 1 minute. Stir in bacon. Spoon Vinaigrette over chicken.

Step 4Note: White balsamic vinegar is a lighter, sweeter cousin of the more common dark balsamic vinegar. If you don't have any on hand, use white wine vinegar in this recipe.
