vegetable oil (i use coconut oil)
chopped chicken or turkey
16 oz. great northern beans, undrained
14 1/2 oz. can tomatoes, undrained
4 oz. chopped green chills, undrained
ready-to-use chicken broth
How to Make Saucy White Chili
1In a large sauce pan, heat the oil over medium heat. Sprinkle the chunked chicken or turkey with salt and pepper and place in the oil. Sauté for five to six minutes, until browned.
2Add the chopped onion and garlic to the chicken mixture and cook for three or four minutes, or until the onion is tender.
Add the remaining ingredients and bring to a boil
3Reduce heat to low and simmer for one hour, or until the chili thickens slightly, stirring occasionally, because the beans will stick to the bottom of your pan if you don't stir them!
This "chili" is not spicy, so if you want it hot, you can adjust that with hot sauce!
4I serve this over a bowl of rice with corn bread on the side! You sure don't have to have the rice, but it's a nice change.
