saucy salsa chicken and rice
this is something i came up with browsing through other recipes and my cabinets. it turned out great and already have a few changes in mind for next time! oh, and i had a bag of Frito's, you know the bottom of the bag no one eats, so i crushed them and topped the dish with these, wonderful!

Ingredients
- 1 package chicken breast halves, skinless and boneless
- 1 package taco seasoning mix (i used cheesy flavor)
- - cumin
- - paprika
- - basil and garlic mix (mccormick)
- - salt and pepper
- 1 can chicken broth
- 1 jar salsa, chunky
- 1 can black beans, drain
- 1 can kernel corn,drained
- 2 cups rice
- - shredded cheese (i used monterey jack mixture)
- CUT CHICEN INTO BITE SIZE PEICES, PLACE IN A BOWL OR ZIP BAG, COAT WITH TACO SEAS AND OTHER SPICES(TO TASTE) REFRIGERATE 30 MIN OR LONGER.
How To Make saucy salsa chicken and rice

Step 1coat fry pan with olive oil, pan should be hot! add chicken saute until slight "crust" forms. add chicken broth, let simmer about 15 min. meanwhile cook rice according to package, set aside.

Step 2add salsa and beans to chicken mixture, continue simmering another 10 min. add rice and corn, reduce heat to low, let flavors "marry".

Step 3you can add the cheese just before serving or to each individual plate, as i did. hope you give it a try!
