- MARINADE
- 1 1/2 pounds boneless chicken thighs, cut into bite-size pieces
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/2 tablespoon garlic powder
- 1/8 teaspoon white pepper
- 1/2 tablespoon Ancho chili powder
- 1/2 teaspoon ginger powder
- COATING
- 1/2 cup rice flour
- 1/4 cup corn starch
- 1/2 sparkling water or soda water
- SAUCE
- 2 tablespoons butter
- 6 tablespoons soy sauce
- 3 tablespoons honey
- 2 tablespoons brown sugar
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon rice vinegar
- 6 tablespoons shaoxing wine
- 1 teaspoon corn starch
- black sesame, seeds for garnish

Step 1Mix the marinade ingredients and rub them over the chicken, and let it marinate for 1 hour.

Step 2Mix the rice flour and corn starch. Whisk in the ice-cold sparkling water. Set aside.

Step 3Make the sauce by melting the butter, then add the ginger and garlic and let it cook for 1 minute.

Step 4Add the remaining ingredients and cook until thickened. Set aside and keep warm.

Step 5Add oil to a large pot and bring it to 350 degrees F. Dip the chicken pieces in the batter.

Step 6Then deep fry in batches for about 5 minutes until they are nice and browned.

Step 7Pour the sauce over the chicken and garnish with the black sesame seeds.
