  • 1 1/2 pounds boneless chicken thighs, cut into bite-size pieces
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/2 tablespoon garlic powder
  • 1/8 teaspoon white pepper
  • 1/2 tablespoon Ancho chili powder
  • 1/2 teaspoon ginger powder
  • COATING
  • 1/2 cup rice flour
  • 1/4 cup corn starch
  • 1/2 sparkling water or soda water
  • SAUCE
  • 2 tablespoons butter
  • 6 tablespoons soy sauce
  • 3 tablespoons honey
  • 2 tablespoons brown sugar
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon rice vinegar
  • 6 tablespoons shaoxing wine
  • 1 teaspoon corn starch
  • black sesame, seeds for garnish

  • Step 1
    Mix the marinade ingredients and rub them over the chicken, and let it marinate for 1 hour.
  • Step 2
    Mix the rice flour and corn starch. Whisk in the ice-cold sparkling water. Set aside.
  • Step 3
    Make the sauce by melting the butter, then add the ginger and garlic and let it cook for 1 minute.

    Add the remaining ingredients and cook until thickened. Set aside and keep warm.
