santa fe chicken & rice
A quick and easy recipe I found on a box of rice. Substitute a hotter salsa to jazz it up if you like. 08-01-2018

Ingredients
- 1 bag boil-in-bag brown rice
- 1 pound seasoned chicken breast, cut into strips
- 1 can mexican-style corn, drained
- 1 can black beans, drained and rinsed
- 1 cup mild salsa
- 1/2 cup (or more) jalapeno monterey jack cheese, shredded
How To Make santa fe chicken & rice

Step 1Prepare the rice according to directions on package.

Step 2Heat a large skillet and spray with cooking spray. Add chicken and cook until it is no longer pink.

Step 3Stir in corn, beans, salsa and the cooked rice. Sprinkle with cheese and heat until cheese is melted.
