A quick and easy recipe I found on a box of rice. Substitute a hotter salsa to jazz it up if you like. 08-01-2018

Ingredients

  • 1 bag boil-in-bag brown rice
  • 1 pound seasoned chicken breast, cut into strips
  • 1 can mexican-style corn, drained
  • 1 can black beans, drained and rinsed
  • 1 cup mild salsa
  • 1/2 cup (or more) jalapeno monterey jack cheese, shredded

How To Make santa fe chicken & rice

  • Step 1
    Prepare the rice according to directions on package.
  • Step 2
    Heat a large skillet and spray with cooking spray. Add chicken and cook until it is no longer pink.
  • Step 3
    Stir in corn, beans, salsa and the cooked rice. Sprinkle with cheese and heat until cheese is melted.
