  • 3/4 lb
    boneless skinless chicken breasts, thin strips
  • 1 11-oz can(s)
    white corn, drained
  • 16 oz
    thick-n-chunky salsa (old el paso)
  • 2 Tbsp
    ripe olives, sliced
  • 1 c
    tortilla chips, broken
  • 1/2 c
    cheddar cheese, shredded

How to Make Santa Fe Chicken


  1. Heat oil in large skillet over medium-high heat until hot.
  2. Add chicken; cook and stir 3-5 minutes or until chicken is no longer pink.
  3. Stir in corn, salsa and olives; simmer 3-5 minutes or until thoroughly heated, stirring occasionally.
  4. Stir in chips; sprinkle with cheese. Serve immediately.
