  • 3/4 pound boneless skinless chicken breasts, thin strips
  • 1 11-oz cans white corn, drained
  • 16 ounces thick-n-chunky salsa (old el paso)
  • 2 tablespoons ripe olives, sliced
  • 1 cup tortilla chips, broken
  • 1/2 cup cheddar cheese, shredded

How To Make santa fe chicken

  • Step 1
    Heat oil in large skillet over medium-high heat until hot.
  • Step 2
    Add chicken; cook and stir 3-5 minutes or until chicken is no longer pink.
  • Step 3
    Stir in corn, salsa and olives; simmer 3-5 minutes or until thoroughly heated, stirring occasionally.
  • Step 4
    Stir in chips; sprinkle with cheese. Serve immediately.
