3/4 lbboneless skinless chicken breasts, thin strips
1 11-oz can(s)white corn, drained
16 ozthick-n-chunky salsa (old el paso)
2 Tbspripe olives, sliced
1 ctortilla chips, broken
1/2 ccheddar cheese, shredded
How to Make Santa Fe Chicken
- Heat oil in large skillet over medium-high heat until hot.
- Add chicken; cook and stir 3-5 minutes or until chicken is no longer pink.
- Stir in corn, salsa and olives; simmer 3-5 minutes or until thoroughly heated, stirring occasionally.
- Stir in chips; sprinkle with cheese. Serve immediately.
