Another great Freezer Cooking recipe! NOTE: Now I usually make this in the crockpot! This chicken is bursting with flavor and very tender! I shredded it and made burritos. Black beans, shredded cheddar cheese, sliced olives, shredded lettuce, diced tomatoes, sour cream all wrapped up in fresh flour tortillas... It went so fast...I didn't have a chance to get photos! If you make it, please post one or I will be sure to take one the next time I make it.

Ingredients

  • 1 cup lime juice
  • 1/3 cup soy sauce
  • 1 tablespoon olive oil, extra virgin
  • 2 teaspoons chili powder
  • 1 teaspoon coriander (ground)
  • 1 teaspoon cumin (ground)
  • 1 tablespoon garlic powder
  • 1 1/2 tablespoons honey
  • 4-5 large chicken breasts, boneless and skinless sliced into strips
  • 2 tablespoons cilantro (fresh leaves, chopped)
  • 1/3 cup white wine (optional)

How To Make santa fe chicken

  • Step 1
If freezing, mix all ingredients and pour into a labeled, 1 gallon freezer bag and freeze.
  • Step 2
If frozen, let thaw overnight in fridge. Add contents into a 9x13 inch baking dish treated with nonstick cooking spray. NOTE: You can also add all ingredients into a crockpot and cook on low for about 6 hours...this is what I did and it was perfect!
  • Step 3
Bake in a preheated oven at 350 degrees for 40 minutes.
