salsa chicken quesadilla
I've made this filling before and used to make tacos and as a dip with tortilla chips. It is really tasty and super easy to whip up! Enjoy!

Ingredients
- - 1 1/2- 2 lbs chicken tenderloins
- 1 package taco seasoning mix
- 1 can cream of chicken soup
- 1 cup hot salsa, your favorite
- 1 package flour tortillas
- 1/4 cup sour cream
- 4 cups shredded cheddar (or any cheese you like)
- OPTIONAL:
- - pickled jalapeno, diced
- - sour cream, for dipping
- - salsa, for dipping
How To Make salsa chicken quesadilla

Step 1Place raw chicken in single layer on bottom of crockpot. Sprinkle evenly with one package of taco seasoning.

Step 2In a mixing bowl, mix cream of chicken soup and salsa until fairly smooth. Poor over chicken/taco seasoning to cover. Cover and Cook on high for 4 hours. (if using chicken breasts cook for 4-5 hrs)

Step 3When the 4 hours is up, shred chicken with two forks, add 1/4 cup of sour cream and mix until well blended.

Step 4Spread cooked chicken mixture on half of tortilla. Sprinkle cheese on top of chicken mixture. (I also add jalapenos here for mine:) Fold tortilla in half to make quesadilla.

Step 5I then place queadilla in my panini maker for about 45 secs or until cheese is melted. You could also heat in a skillet on the stove. I serve with corn, salsa, and sour cream. Enjoy!
