This is a very simple and hearty dish. Serve with a good crusty bread for a complete meal.

  • 1
    roasting chicken
  • 1/4 lb
    butter soften
  • 1/4 tsp
    thyme, dried
  • 1/4 tsp
    rosemary, dried
  • 1/2 tsp
    parsley flakes
  • 1/2 tsp
    garlic powder
  • 4 stalk(s)
  • 4
  • 2 large
  • 5
    red potatoes, small

How to Make Rustic French Roast Chicken with Vegetables


  1. Preheat oven to 325 degrees
  2. Combine all the herbs and spices with the butter.
  3. Remove giblets, rinse and dry the chicken.
    Rub the butter mixture under the skin of the chicken.
  4. Chunk all the vegetables and place in the bottom of a cast iron (Le Creuset type) stew pot.
    Place chicken on top of the vegetables.
  5. Place in oven and roast for 2 1/2 to 3 hours.
    If time is an issue increase oven temp. to 375 degrees and roast for 1 1/2 to 2 hours.
