Ingredients
- 1 - roasting chicken
- 1/4 pound butter soften
- 1/4 teaspoon thyme, dried
- 1/4 teaspoon rosemary, dried
- 1/2 teaspoon parsley flakes
- 1/2 teaspoon garlic powder
- 4 stalks celery
- 4 - carrots
- 2 large onions
- 5 - red potatoes, small
How To Make rustic french roast chicken with vegetables

Step 1Preheat oven to 325 degrees

Step 2Combine all the herbs and spices with the butter.

Step 3Remove giblets, rinse and dry the chicken. Rub the butter mixture under the skin of the chicken.

Step 4Chunk all the vegetables and place in the bottom of a cast iron (Le Creuset type) stew pot. Place chicken on top of the vegetables.

Step 5Place in oven and roast for 2 1/2 to 3 hours. If time is an issue increase oven temp. to 375 degrees and roast for 1 1/2 to 2 hours.
