This is a very simple and hearty dish. Serve with a good crusty bread for a complete meal.

Ingredients

  • 1 - roasting chicken
  • 1/4 pound butter soften
  • 1/4 teaspoon thyme, dried
  • 1/4 teaspoon rosemary, dried
  • 1/2 teaspoon parsley flakes
  • 1/2 teaspoon garlic powder
  • 4 stalks celery
  • 4 - carrots
  • 2 large onions
  • 5 - red potatoes, small

How To Make rustic french roast chicken with vegetables

  • Step 1
    Preheat oven to 325 degrees
  • Step 2
    Combine all the herbs and spices with the butter.
  • Step 3
    Remove giblets, rinse and dry the chicken. Rub the butter mixture under the skin of the chicken.
  • Step 4
    Chunk all the vegetables and place in the bottom of a cast iron (Le Creuset type) stew pot. Place chicken on top of the vegetables.
  • Step 5
    Place in oven and roast for 2 1/2 to 3 hours. If time is an issue increase oven temp. to 375 degrees and roast for 1 1/2 to 2 hours.
