I was going thru my step mothers recipe box years ago and came across this recipe and wrote it down and went home and tried it and we loved it.

Ingredients

  • 3 - chicken breasts boneless or bone in
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can rotel tomatoes
  • 1 - chopped onion
  • 1 pound velveeta cheese (cut up in small pieces)
  • 1 - large bag of doritoes (whatever flavor you prefer)

How To Make rotel chicken

  • Step 1
    boil chicken breasts and when chicken is done cut up in bite size pieces. this is also good for leftover chicken that you don't want to throw out.
  • Step 2
    place all the soups and onions in a bowl and mix well.
  • Step 3
    spray a 9 x 13 dish with pam and put doritoes in the bottom and then layer the rest. Chicken, soup mixture, cheese, doritoes will be on top.
  • Step 4
    Place in 350 degree oven covered for about 35 minutes. Take the cover off and cook for the next 10 minutes. I usually just serve this with a salad and bread.
