I was going thru my step mothers recipe box years ago and came across this recipe and wrote it down and went home and tried it and we loved it.

Ingredients

  • 3
    chicken breasts boneless or bone in
  • 1 can(s)
    cream of mushroom soup
  • 1 can(s)
    cream of chicken soup
  • 1 can(s)
    rotel tomatoes
  • 1
    chopped onion
  • 1 lb
    velveeta cheese (cut up in small pieces)
  • 1
    large bag of doritoes (whatever flavor you prefer)

How to Make Rotel Chicken

Step-by-Step

  1. boil chicken breasts and when chicken is done cut up in bite size pieces. this is also good for leftover chicken that you don't want to throw out.
  2. place all the soups and onions in a bowl and mix well.
  3. spray a 9 x 13 dish with pam and put doritoes in the bottom and then layer the rest. Chicken, soup mixture, cheese, doritoes will be on top.
  4. Place in 350 degree oven covered for about 35 minutes. Take the cover off and cook for the next 10 minutes. I usually just serve this with a salad and bread.
