Ingredients

  • 1
    whole chicken cut up, i add a couple extra thighs and 1 extra split breast
  • 2 tsp
    salt
  • 1 tsp
    freshly ground pepper
  • 1/2 c
    all purpose flour
  • 2 Tbsp
    olive oil, extra virgin
  • 1
    large red pepper, chopped
  • 1
    vidalia onion, chopped
  • 6
    cloves of garlic minced
  • 1 1/2 tsp
    oregano
  • 1 c
    dry white wine(a good wine please)
  • 1
    28 oz. can diced tomatoes with juice
  • 3/4 c
    chicken broth
  • 3 Tbsp
    capers without juice
  • 1/4 c
    coarsly chopped fresh basil

How to Make Chicken Cacciatore by Rose

Step-by-Step

  1. Dredge the chicken pieces with the flour, salt and pepper. In a large pot, heat olive oil medium flame and add the chicken pieces and saute until slightly browned. You will have to do this in two batches. Remove to plate. Add the bell pepper, onion, garlic and oregano over medium heat, may have to add a little more olive oil, until tender. Add the wine and simmer on low, a minute or two, then add the tomatoes with the juice, broth, and capers and basil. Return all the chicken pieces to pan, coat with all liquid, simmer over low heat at least 1hr. and 30 minutes or until the chicken breasts are totally done. Plate up with all juices and tomatoes and all are on top. I usually have a nice big bread to dunk in the juice, all love that in my family.
  2. Any side dishes are great, especially rice pilaf or just a side of plain pasta with butter and cheese, maybe some broccoli florets through the pasta. Enjoy
