roda's easy chicken and rice soup

I was wanting a good rice dish when I starting pulling items off the shelves. This great soup is what I came up with. We enjoyed it and I have prepared it several times. I have used leftover roasted chicken breast or rotisserie chicken from the local supermarket. I use Red Gold stewed, diced tomatoes.

Ingredients

  • 3 cups chicken stock
  • 3 cups roasted, grilled, or baked chicken--cubed
  • 14 ounces canned stewed, diced tomatoes with celery,onion, and green pepper--undrained
  • 1 cup frozen peas
  • 2 cups instant brown rice

How To Make roda's easy chicken and rice soup

  • Step 1
    Combine all ingredients (except rice) in a 3 quart pot and bring to a boil over med heat; add instant brown rice. Continue to cook, covered, until rice is tender.
  • Step 2
    NOTE: Can add additional stock if needed while cooking rice to achieve desired amount of soup broth.
