Ingredients

  • 1 lb
    chicken breast
  • 1 jar(s)
    fire roasted red peppers
  • 1 jar(s)
    salsa, your favorite
  • 1 bag(s)
    trader joe fire roasted onions and peppers
  • 1
    small green chile
  • 1/2 c
    fresh cilantro
  • 1 Tbsp
    garlic
  • 1 1/2 Tbsp
    adobo seasoning
  • 1 can(s)
    black beans
  • 1 Tbsp
    canola oil
  • 1/2 Tbsp
    salt

How to Make Roasted Pepper Chicken Chili

Step-by-Step

  1. cut chicken into bite size pieces. brown in canola oil. in food processor puree roasted red chiles, green chiles, and cilantro. pour into the chicken with a jar of salsa and TJ pepper and onions. add spices, garlic and beans. simmer for about an hour. add cheese and/or serve over rice if desired.
