Ingredients

  • 4 large bone in chicken thigns
  • 2 teaspoons salt
  • 4 scallions chopped
  • 1 cup each basil, parsley and cilantro
  • 3 cloves garlic
  • 1/2 cup sliced almonds
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil

How To Make roasted chicken thighs with herb & almond pesto

  • Step 1
    Preheat the oven to 450 degrees. Place the chicken thighs on a sprayed baking sheet.
  • Step 2
    Add the salt, scallions, herbs, almonds, garlic, and lemon juice in a food processor.
  • Step 3
    Process while drizzling the olive oil in until thickened.
  • Step 4
    Loosen the skin and rub the pesto under the skin and all over the chicken Bake for about 30 to 40 minutes until juices run clear.
