- 4 large bone in chicken thigns
- 2 teaspoons salt
- 4 scallions chopped
- 1 cup each basil, parsley and cilantro
- 3 cloves garlic
- 1/2 cup sliced almonds
- 2 tablespoons lemon juice
- 1/4 cup olive oil
How To Make roasted chicken thighs with herb & almond pesto

Step 1Preheat the oven to 450 degrees. Place the chicken thighs on a sprayed baking sheet.

Step 2Add the salt, scallions, herbs, almonds, garlic, and lemon juice in a food processor.

Step 3Process while drizzling the olive oil in until thickened.

Step 4Loosen the skin and rub the pesto under the skin and all over the chicken Bake for about 30 to 40 minutes until juices run clear.
