Ingredients
- RUB FOR CHICKEN
- olive oil
- 1 1/2 tablespoons paprika (not smoked)
- 1 tablespoon ground cumin
- 2 teaspoons fresh lemon juice
- salt & pepper
- 1/2 teaspoon dried oregano
- 3 cloves garlic, minced
- 2 tablespoons white vinegar
- CHICKEN & VEGGIES
- 3 - 4 pounds combination of bone-in chicken thighs and drumsticks
- 1 1/2 pounds sweet potatoes, cubed
- 2 large red onions, quartered
- 2 bell peppers, red, yellow or orange
- melted ghee if possible
- salt & pepper
- lemon sliced
- cilantro
How To Make roast chicken with sweet potatoes, onions, peppers

Step 1Combine all ingredients for spice mix. Pat chicken pieces dry with paper towels. Rub chicken pieces with spice rub on all sides.

Step 2Combine onions, bell peppers, and sweet potatoes in a deep roasting pan. Drizzle the ghee over the vegetables and toss to coat.

Step 3Arrange chicken over vegetables and place sliced lemon pieces over the top of the chicken. Roast chicken and veggies at 425 degrees F. for 20 minutes - turn the chicken and toss the veggies. Continue cooking for another 20-25 minutes until chicken and veggies are cooked through.

Step 4Remove from oven and let rest slightly - garnish with cilantro.
