Ingredients
- STUFFING
- 2 tablespoons olive oil
- 1 large shallot, chopped
- 4 cloves garlic, minced
- 2 pounds mixed mushrooms chopped
- 1/2 cup dry white wine
- salt and pepper, to taste
- 1/2 cup shredded Parmesan cheese
- 1/4 cup plain dry bread crumbs
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh oregano
- 1 tablespoon chopped sage
- 1 1/2 cups cooked rice
- CHICKEN
- 2 cups chicken broth
- olive oil
- 1 whole chicken
- salt
- pepper
- paprika
How To Make roast chicken with mushroom rice stuffing

Step 1First make the stuffing. Add olive oil to a sauce pan. Add the shallots and garlic. Cook until translucent. Add the mushrooms and cook until the mushrooms give up their moisture. Add the wine and cook until most has evaporated. Salt and pepper to taste.

Step 2Transfer the mushrooms to a food processor and add the cheese, breadcrumbs, and fresh herbs. Process into a thick paste. Remove and stir in the rice. Set aside.

Step 3Preheat oven to 400 degrees F. Get a roaster and add the chicken broth in the bottom of the roaster.

Step 4Drizzle the olive oil over the chicken and season with the salt, pepper and paprika. Add the stuffing to the inside of the chicken.

Step 5Cover the chicken with foil and place in the oven. Bake for 1 hour. Remove the foil and bake another 20 minutes or so, until the internal temp reaches 165 degrees F.

Step 6Remove from the oven and let rest 15 minutes. Remove the stuffing, carve the chicken, and serve.
