roast chicken with couscous stuffing

This recipe is kind of different. It's the only one I've ever seen with couscous stuffing before, but it's absolutely wonderful. I got it from a healthy cooking cook book I received as a gift back in the mid nineties. If you've heard of the recipe and the book, let me know in the messages or comments so that I can purchase a new one since I lost the book years ago, but it had some seriously great recipes in it!

Ingredients

  • 1 - broiler/fryer whole chicken
  • STUFFING
  • 1 1/2 cups chicken stock
  • 2 tablespoons olive oil
  • 1 cup couscous
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped fresh parsley

How To Make roast chicken with couscous stuffing

  • Step 1
    To prepare the stuffing, in a small sauce pan, combine the stock and 1 Tbsp oil. Bring to a boil over moderately high heat and stir in the couscous. Remove the pan from the heat and let stand, covered for 10 minutes.
  • Step 2
    Meanwhile, take the remaining Tbsp. of oil and the onion, garlic and parsley and saute over moderate heat until translucent. Mix with the couscous.
  • Step 3
    Stuff the couscous into the cavity of the chicken and wrap tightly with aluminum foil.
  • Step 4
    Place in oven covered at 375 degrees for about 20 minutes a pound, then uncover chicken while leaving the couscous covered with foil and bake an additional 20 to 30 minutes until skin is nicely browned and crisp.
