roast chicken with couscous stuffing
This recipe is kind of different. It's the only one I've ever seen with couscous stuffing before, but it's absolutely wonderful. I got it from a healthy cooking cook book I received as a gift back in the mid nineties. If you've heard of the recipe and the book, let me know in the messages or comments so that I can purchase a new one since I lost the book years ago, but it had some seriously great recipes in it!

Ingredients
- 1 - broiler/fryer whole chicken
- STUFFING
- 1 1/2 cups chicken stock
- 2 tablespoons olive oil
- 1 cup couscous
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup chopped fresh parsley
How To Make roast chicken with couscous stuffing

Step 1To prepare the stuffing, in a small sauce pan, combine the stock and 1 Tbsp oil. Bring to a boil over moderately high heat and stir in the couscous. Remove the pan from the heat and let stand, covered for 10 minutes.

Step 2Meanwhile, take the remaining Tbsp. of oil and the onion, garlic and parsley and saute over moderate heat until translucent. Mix with the couscous.

Step 3Stuff the couscous into the cavity of the chicken and wrap tightly with aluminum foil.

Step 4Place in oven covered at 375 degrees for about 20 minutes a pound, then uncover chicken while leaving the couscous covered with foil and bake an additional 20 to 30 minutes until skin is nicely browned and crisp.
