Ingredients
- 8 - chicken thighs
- 2 large onions chopped
- 6 cloves garlic minced
- 2 cups chicken stock
- 1/2 bottle red wine good quality
- 1 cup mushrooms chopped
- 3 - carrots sliced
- 6 ounces tomato paste
- 2 - bay leaves
- 2 sprigs each rosemary and thyme
- 1/2 cup fresh parsley chopped
- 2 tablespoons oil
- - salt and pepper to taste
How To Make red wine chicken stew

Step 1Add oil to large skillet fry chicken until golden in batches remove from pan. Add onions and garlic and saute until softened. Add chicken back to pan.

Step 2Add remaining ingredients and bring to a boil. Reduce to a simmer and simmer 1 hour.

Step 3Remove bay leaves and sprigs of thyme and rosemary. Serve over mashed potatoes, rice or noodles
