I think if I made this recipe again, I would leave the onions out. Just have nice glossy glaze on the meat.

Ingredients

  • 4 boneless skinless chicken thighs
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • salt and pepper
  • 1/2 cup seedless raspberry preserves
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons fresh thyme

How To Make raspberry balsamic chicken

  • Step 1
    Season the chicken with salt and pepper. Add oil to the pan and brown the chicken for about 3 minutes on each side. Remove to a plate and set aside.
  • Step 2
    Add the onion and garlic to the drippings in the pan. Cook about 2 minutes.
  • Step 3
    Add the preserves and balsamic vinegar.
  • Step 4
    Once the jam is melted, add the chicken back and simmer until the chicken is cooked through.
  • Step 5
    Remove to a plate and spoon the sauce over the chicken and sprinkle on the thyme.
