raspberry balsamic chicken
I think if I made this recipe again, I would leave the onions out. Just have nice glossy glaze on the meat.

Ingredients
- 4 boneless skinless chicken thighs
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- salt and pepper
- 1/2 cup seedless raspberry preserves
- 2 tablespoons balsamic vinegar
- 2 teaspoons fresh thyme
How To Make raspberry balsamic chicken

Step 1Season the chicken with salt and pepper. Add oil to the pan and brown the chicken for about 3 minutes on each side. Remove to a plate and set aside.

Step 2Add the onion and garlic to the drippings in the pan. Cook about 2 minutes.

Step 3Add the preserves and balsamic vinegar.

Step 4Once the jam is melted, add the chicken back and simmer until the chicken is cooked through.

Step 5Remove to a plate and spoon the sauce over the chicken and sprinkle on the thyme.
