Great quick recipe for left over chicken. You can use any vegetables you have on hand so the recipe can always be unique. You can use fresh chicken just cook it with the vegetables.

Ingredients
- 4 ounces rice noodles
- 1 tablespoon peanut oil
- 6 ounces shiitake mushrooms
- 1/2 - red onion diced
- 1/2 - head red cabbage diced
- 4 cloves garlic minced
- 1 tablespoon ginger minced
- 3 - scallions diced
- 1 cup rotisserie chicken diced
- 1 jar mongolian sauce i used pf changs brand
- - cilantro chopped for garnish
How To Make quick & easy mongolian chicken stir fry

Step 1Cook the rice noodles according to package directions. Drain and set aside.

Step 2Add oil to large skillet. Add the red onion, red cabbage, green onions, garlic, mushrooms and ginger. Stir fry for 3 minutes. Add the chicken rice noodles and Mongolian sauce. Cook stirring until everything is well incorporated. Garnish with cilantro.
