A quick way to create a delicious Italian meal. Serve over spaghetti noodles if you prefer and just add a salad. Delish!

Ingredients

  • 2 cloves garlic, pressed or finely minced
  • 2 - boneless, skinless chicken breasts - each sliced in half to make 4 thinner breasts
  • 1/8-1/4 teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • 1 can 14.5 oz. stewed tomatoes
  • 2 small zucchini, cut in half lengthwise and sliced crosswise
  • 2 tablespoons fresh basil leaves, sliced thinly (or 1/2 tsp. dried basil)
  • 1/3 cup whipping cream

How To Make quick chicken with pomodoro sauce

  • Step 1
    Sprinkle/rub chicken breasts with garlic and crushed red pepper - sprinkle with salt and pepper.
  • Step 2
    Add 1 tbsp. oil to skillet and brown chicken over medium-high heat.
  • Step 3
    Add tomatoes, zucchini and basil. Cook, uncovered, over medium heat for approx. 15 minutes or until sauce is thickened and chicken is cooked through. Stir occasionally.
  • Step 4
    Lower heat and add cream just to heat through (do not boil).
