Quick Chicken with Pomodoro Sauce

2 clovegarlic, pressed or finely minced
2boneless, skinless chicken breasts - each sliced in half to make 4 thinner breasts
1/8-1/4 tspred pepper flakes
1 Tbspolive oil
1 can(s)14.5 oz. stewed tomatoes
2 smallzucchini, cut in half lengthwise and sliced crosswise
2 Tbspfresh basil leaves, sliced thinly (or 1/2 tsp. dried basil)
1/3 cwhipping cream
How to Make Quick Chicken with Pomodoro Sauce
- Sprinkle/rub chicken breasts with garlic and crushed red pepper - sprinkle with salt and pepper.
- Add 1 tbsp. oil to skillet and brown chicken over medium-high heat.
- Add tomatoes, zucchini and basil. Cook, uncovered, over medium heat for approx. 15 minutes or until sauce is thickened and chicken is cooked through. Stir occasionally.
- Lower heat and add cream just to heat through (do not boil).
