quick chicken in white wine sauce

This is one I have used for a while now, for when you need something quick. Always good to have some frozen chicken breasts around! It's also a good make-ahead dish. I'll take a photo next time I make it.

Ingredients
- 2 - chieck breasts
- 1 small onion, chopped
- 1/2 cup white wine
- 1/2 teaspoon thyme, dried
- 1/4 teaspoon black pepper
- 1 clove fresh garlic, minced
- 1 tablespoon flour
- 1 tablespoon parsley (fresh if available)
- 4 ounces sliced mushrooms
- 1/4 cup olive oil
How To Make quick chicken in white wine sauce

Step 1Heat 1/4 cup of oil in a skillet, add chicken breasts and brown uniformly. Remove the chicken to a nearby plate and reserve the pan oil.

Step 2In a shaker or jar, combine the wine, pan oil, flour , thyme, pepper and minced garlic. Give this a good shake.

Step 3Combine the chicken, shaker contents and chopped onion in the pan and simmer for 1/2 hour. This will be very fragrant.

Step 4Add the mushrooms ten minutes later. Serve over rice of your choice.
