quick chicken and veggie casserole

I'm always looking for quick and easy dishes for my family. One night I was looking in my pantry and found this recipe on the back of my baking mix box. It was a hit and requested again! This is good with any type of frozen vegetable, in fact frozen mixed vegetables are our favorite. Use about 3/4 cup of each veggie. I can also easily see substituting ground breakfast sausage for the chicken and serve for breakfast or brunch. Give it a try!

Ingredients

  • 1 cup baking mix
  • 1 1/2 cups pre-cooked chopped chicken
  • 3 large eggs
  • 1 cup milk
  • 1 1/2 cups cheddar cheese (shredded)
  • 1 package frozen chopped broccoli (10 oz. rinsed and drained) or about 1.5 cups of frozen vegetable. your choice!
  • 1/4 teaspoon seasoned salt
  • 1/4 teaspoon pepper

How To Make quick chicken and veggie casserole

  • Step 1
    Prehead oven to 400 degrees. Grease (or spray) 2 quart casserole dish.
  • Step 2
    Place chicken, broccoli and cheese in prepared casserole dish.
  • Step 3
    Blend baking mix, milk, eggs, salt and pepper in a separate mixing bowl until blended.
  • Step 4
    Pour into dish over chicken, vegetables and cheese.
  • Step 5
    Bake for 35-40 minutes or until knife inserted in center comes out clean. Let cool 5 minutes before serving.
