Ingredients

  • 1
    rotisserie chicken breast cut into cubes
  • 1 c
    cottage cheese
  • 1 can(s)
    cream soup, any flavor
  • 1/2 can(s)
    evaporated milk
  • 1 c
    grated mozzarella cheese
  • 1 c
    grated cheddar cheese
  • 1 pkg
    ready to bake lasagna noodles
  • 1
    slightly beaten egg
  • ·
    (optional) sauteed onions, chopped peppers or sliced mushrooms, etc.

How to Make Quick as a Wink Chicken Lasagna

Step-by-Step

  1. Mix cottage cheese, grated mozzarella, cheddar and egg.
  2. In a saucepan mix chicken chunks, cream soup and evaporated milk. (Add any optional ingredients you may choose.)
  3. In a glass baking dish, alternate layers of noodles, sauce,and cheese - twice.
  4. Cover with plastic wrap and microwave about 15 minutes. Let rest about 5 minutes. Cut and serve.
