Ingredients

  • 1 Tbsp
    canola oil
  • 1 large
    onion, chopped
  • 3 clove
    garlic, minced
  • 1 can(s)
    (14 oz.) low-sodium tomato sauce
  • 1/4 c
    tomato paste
  • 1/2 c
    water
  • 1/3 c
    apple cider vinegar
  • 5 Tbsp
    molasses
  • 1/4 tsp
    ground black pepper
  • 1/2 tsp
    liquid smoke
  • 1
    whole rotisserie chicken, skin removed, meat shredded into thin strips (about 4 to 4 1/2 cups)
  • 6
    whole-wheat hamburger rolls
  • 6 large
    green lettuce leaves

How to Make Pulled BBQ Chicken Sandwiches

Step-by-Step

  1. Heat the oil in a large saute pan over a medium heat.
  2. Add the onions and cook until they are soft and translucent, about 5 minutes.
  3. Add the garlic and cook for 1 minute more.
  4. Add tomato sauce, tomato paste, water, vinegar, molasses, black pepper, and liquid smoke.
  5. Bring to a boil.
  6. Reduce heat to medium-low and simmer for 15 minutes.
  7. Add chopped chicken.
  8. Return to a simmer, and cook an additional 10 minutes.
  9. Split rolls.
  10. Please a leaf of lettuce on each roll.
  11. Pile on 3/4 cup of the chicken mixture onto each roll.
