This recipe is very famous in Puerto Rico especially in Christmas. You can eat with chicken, pork, salud etc.

method Slow Cooker Crock Pot
yield 5-6 per serving

Ingredients

  • 1 can of gandules or if purfered fresh
  • 2 liters of water
  • 3 teaspoons of salt
  • 2 STEP
  • 1/2 ounce of tocino/white bacon
  • 1 ounce of cooked ham
  • 1 medium onion peeled
  • 1 small sweet pepper with no seeds
  • 1 medium green pepper with no seeds
  • 1 small tomato
  • 3 slices of culantro washed
  • 3 slices of culantrillo washed
  • 3 STEP
  • 3 tablespoons of oil and also achiote
  • - a couple of olives with no seedes
  • 1/4 can of tomato salsa
  • 1/2 teaspoon of alcaparras/capers
  • 4TH STEP
  • 2 1/4 cups of arroz/rice and wash it and drain
  • 3 cups of water so it can boil with gandules

How To Make puerto rico rice with pigeon pea-( arroz con gandu

  • Step 1
    meanwhile in a pot cook until brown the tocino, ham and the rest of the ingredients as well as the sofrito. Put low heat so that all ingredients and sofrito is cooking and stir well until everything is cooked. Then add the gandules,water.
  • Step 2
    Then in about 20 min. after you have put the ingredients in first step when boiled put in rice in high heat. Let water dry and stir it again and then cover the pot and put in low heat.
  • Step 3
    Then check again about 30 min. stir it again and if its soft the rice that means its ready to serve. Buen Probecho!!!!!
