I put this together the other day, and it was excellent. The stuffing can be of your choice. I chose spinach, sun-dried tomatoes, and Feta cheese. It is easy to make, and you probably have what you need in your fridge and pantries. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 2 tablespoons non-flavored oil, like grapeseed, or canola
  • 1 large chicken breast, boneless, skinless
  • 2 ounces spinach, frozen variety
  • 2 ounces sun-dried tomatoes
  • 2 ounces Feta cheese
  • 2 slices thick-sliced bacon
  • salt, Kosher variety, to taste
  • black pepper, freshly ground, to taste

    Gather your ingredients (mise en place).
  • Step 3
    Prepping the Chicken Breast You have two choices: you can pound it flat, or you can butterfly it. Pound Flat Use a meat mallet or heavy-bottom pan to pound the chicken breast into an even thickness of about 1/4 inch. Butterfly It Carefully cut the chicken breast in half, leaving a bit on one side, so it opens like a book. You can find tutorials on the internet for both techniques. If you want my opinion, I prefer the butterfly method.

    Stuff and Roll the Chicken Breast Lay the spinach, sun-dried tomatoes, and Feta on the chicken breast, sprinkle with a bit of salt and pepper, then roll up. Wrap the rolled chicken breast tightly with the bacon, and sprinkle with a bit more salt and pepper.
  • Step 5
    Place a rack in the middle position and preheat the oven to 400F/205C.
  • Step 6
    Add the oil to an ovenproof skillet over medium heat. When the oil begins to shimmer, add the bacon-rolled chicken breast.
  • Step 7
    Allow to sear for about 2 minutes, and turn over, and sear on all sides, about 2 minutes per side. This will get the cooking process going and help to crisp the bacon.

    Place into the preheated oven, and bake until the internal temperature reaches 165F/73C, about 30 – 40 minutes.

    Remove from the oven and allow to rest for about 5 minutes before serving.
