This is a very easy recipe to make, and you probably have all the ingredients you need, right there hiding in your pantry, and refrigerator.

It is spicy, but not overly so… And comes together in under 30 minutes.

Ingredients

  • PLAN/PURCHASE

  • THE SPICE RUB

  • 3 Tbsp
    coconut sugar
  • 1 Tbsp
    chili powder, hot or mild, your choice
  • 1/2 tsp
    ground cumin
  • 1/2 tsp
    paprika, mild, or hot, your choice
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    dehydrated onions, roughly ground
  • 1/2 tsp
    white pepper, freshly ground
  • 1/2 tsp
    espresso powder
  • 1/4 tsp
    salt, kosher variety, fine grind
  • THE CHICKEN

  • 2 large
    chicken breasts, boneless, skinless
  • 2 tsp
    grapeseed oil

How to Make Poultry Essentials: Spicy Baked Chicken Breasts

Step-by-Step

  1. PREP/PREPARE
  2. For this recipe, you will need a rimmed baking sheet, lined with parchment paper, and a wire rack. The rack is optional; however, it gives the chicken a crisper crust on the bottom.
  3. Brining the Chicken:
    There are times when brining is not necessary, and other times when it is advisable. When I oven back chicken, I usually brine. A standard brine for boneless, skinless chicken breast would be about 2.5 tablespoons of salt dissolved into a quart of cold water, then immerse the breast for about 45 minutes, but no more.
    FYI: I you do choose to brine the chicken, then do not add the salt to the spice rub.
  4. Gather your ingredients (mise en place).
  5. Add all of the ingredients together for the spice rub, and reserve.
  6. Place a rack in the middle position, and preheat the oven to 425f (220c).
  7. Cut the chicken in half, lengthwise.
  8. Coat with the grapeseed oil, and sprinkle the spice rub on both sides of the chicken.
  9. Place on a parchment-lined baking sheet, fitted with a wire rack (if using).
  10. Place into the preheated oven, and bake until cooked through, and the spices are nice and brown, about 18 – 22 minutes.
  11. PLATE/PRESENT
  12. Rest the chicken for about 5 minutes, then slice and serve. Enjoy.
  13. Keep the faith, and keep cooking.
