poultry essentials: honey/dijon meatballs

Made these chicken meatballs the other day, and gave them a bit of an Asian slant. I have served them with rice and noodles, and both are tasty. FYI: The sauce is simple but really adds deep flavor to this recipe. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • THE MEATBALLS
  • 1 pound ground chicken
  • 1/4 cup yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup bread crumbs, Panko variety
  • 1 large egg, whisked
  • 1 tablespoon Dijon mustard, smooth variety
  • 1/4 teaspoon Kosher salt, fine grind
  • 1/4 teaspoon white pepper, freshly ground
  • 2 tablespoons olive oil, extra virgin variety, for cooking
  • THE SAUCE
  • 3 tablespoons fresh clover honey
  • 3 tablespoons Dijon mustard
  • 1 1/2 tablespoons Tamari sauce or liquid aminos

How To Make poultry essentials: honey/dijon meatballs

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your ingredients (mise en place).
  • Step 3
    Purchase pre-ground chicken, or grind your own. I prefer using chicken breasts, but thighs, or a combination of both would be fine.
  • Step 4
    Add all the ingredients, except the olive oil, for the meatballs into a bowl, and gently mix together.
  • Step 5
    Gentle is the key. If you overmix, they will wind up being tough.
  • Step 6
    Shape into meatballs. I like them a bit small, so I get about 14 – 16 per batch.
  • Step 7
    Heat olive oil in a large skillet over medium heat, then add the meatballs.
  • Step 8
    Cook, turning occasionally, until browned and cooked through, about 12 - 14 minutes.
  • Step 9
    In a small bowl, whisk together honey, soy sauce, and Dijon mustard.
  • Step 10
    Pour over meatballs and toss to coat, cooking for 4 – 5 minutes until the glaze thickens.
