poultry essentials: baked chicken thighs
This is an easy/peasy recipe, and produces moist, flavorful chicken thighs with crispy skin. Play around with the seasoning mix (sometimes I just use salt and pepper), and develop a flavor you are happy with. If you have the chicken thighs, you are only about 40 minutes from a great meal. FYI: You can cook these and freeze them for later. Properly frozen, they will last 2 – 3 months. If you vacuum seal and freeze, they will last up to a year. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- THE CHICKEN
- 3 medium chicken thighs bone-in, skin-on
- 2 tablespoons olive oil or other non-flavored variety
- SEASONING MIX
- 3/4 teaspoon salt, Kosher variety, fine grind
- 1/2 teaspoon paprika, mild or smoked variety
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Place a rack in the middle position and preheat the oven to 425f/220c.

Step 4Pat the chicken dry and rub with the seasoning mix, both sides.

Step 5Heat oil in a heavy nonstick skillet over high heat.

Step 6Place chicken in the skillet, skin side down. Once all thighs are in the pan, reduce the heat to medium-high and cook for 15 minutes.

Step 7Turn chicken, skin side up, and cook for an additional 5 – 7 minutes.

Step 8Place into the preheated oven.

Step 9Bake until the skin crisps and the thighs register 165f/75c, about an additional 10 12 minutes

Step 10Let rest about 5 – 7 minutes before serving.

Step 12Serve with rice or potatoes and your favorite veggies. Enjoy.
