Ingredients For potluck chicken casserole

1/2 cmushrooms, freshly chopped

1/2 tsppepper

1 tspsalt

2 tsplemon juice

2 ozpimentos, drained

1 cpeas, thawed

1 ccelery, chopped

3 clong grain rice, cooked

4 cchicken, cooked and cubed

3/4 cmayonnaise

1.25 cmilk

3 Tbspall purpose flour

4 Tbspbutter

2garlic cloves, minced

3 Tbsponion, finely chopped

3/4 ccorn flake cereal, crushed
How To Make potluck chicken casserole

1In a saucepan over medium heat, saute mushrooms, onion and garlic in 3 tablespoons butter until tender; stir in flour until thoroughly combined.

2Gradually add milk; bring to a boil.

3Cook and stir for 2 minutes or until thickened and bubbly.

4Remove from heat; stir in mayonnaise until smooth.

5Add chicken, rice, celery, peas, pimientos, lemon juice, salt and pepper; mix well.

6Spoon into an ungreased 12x9x2 inch baking dish.

7Melt remaining butter; toss with cornflakes and sprinkle over casserole.

8Bake, uncovered, at 350 for 30-35 minutes or until bubbly.
