Ingredients

  • 1/2 cup mushrooms, freshly chopped
  • 3 tablespoons onion, finely chopped
  • 2 - garlic cloves, minced
  • 4 tablespoons butter
  • 3 tablespoons all purpose flour
  • 1.25 cups milk
  • 3/4 cup mayonnaise
  • 4 cups chicken, cooked and cubed
  • 3 cups long grain rice, cooked
  • 1 cup celery, chopped
  • 1 cup peas, thawed
  • 2 ounces pimentos, drained
  • 2 teaspoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 cup corn flake cereal, crushed

How To Make potluck chicken casserole

  • Step 1
    In a saucepan over medium heat, saute mushrooms, onion and garlic in 3 tablespoons butter until tender; stir in flour until thoroughly combined.
  • Step 2
    Gradually add milk; bring to a boil.
  • Step 3
    Cook and stir for 2 minutes or until thickened and bubbly.
  • Step 4
    Remove from heat; stir in mayonnaise until smooth.
  • Step 5
    Add chicken, rice, celery, peas, pimientos, lemon juice, salt and pepper; mix well.
  • Step 6
    Spoon into an ungreased 12x9x2 inch baking dish.
  • Step 7
    Melt remaining butter; toss with cornflakes and sprinkle over casserole.
  • Step 8
    Bake, uncovered, at 350 for 30-35 minutes or until bubbly.
