Ingredients
- 1/2 cup mushrooms, freshly chopped
- 3 tablespoons onion, finely chopped
- 2 - garlic cloves, minced
- 4 tablespoons butter
- 3 tablespoons all purpose flour
- 1.25 cups milk
- 3/4 cup mayonnaise
- 4 cups chicken, cooked and cubed
- 3 cups long grain rice, cooked
- 1 cup celery, chopped
- 1 cup peas, thawed
- 2 ounces pimentos, drained
- 2 teaspoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup corn flake cereal, crushed
How To Make potluck chicken casserole

Step 1In a saucepan over medium heat, saute mushrooms, onion and garlic in 3 tablespoons butter until tender; stir in flour until thoroughly combined.

Step 2Gradually add milk; bring to a boil.

Step 3Cook and stir for 2 minutes or until thickened and bubbly.

Step 4Remove from heat; stir in mayonnaise until smooth.

Step 5Add chicken, rice, celery, peas, pimientos, lemon juice, salt and pepper; mix well.

Step 6Spoon into an ungreased 12x9x2 inch baking dish.

Step 7Melt remaining butter; toss with cornflakes and sprinkle over casserole.

Step 8Bake, uncovered, at 350 for 30-35 minutes or until bubbly.
