potato patties & raspberry chicken...
This is 1 of my easy meals I make every so often. My family loves the potato patties & since you have to boil the potatoes it's even easy if someone boils then before you get home from work or school.

Ingredients
- 4 - potatoes, medium
- 1 can corn beef
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1 pound chicken breasts, boneless and skinless
- 1/2 teaspoon salt and pepper
- 1/2 teaspoon garlic, minced
- 1/2 cup raspberry vinaigrette
- 1/3 cup water
How To Make potato patties & raspberry chicken...

Step 1Boil the potatoes until fork will go easy go in. Let cool for a bit. Then peel off the skin, place in medium bowl & then mash up with a potato masher. Open 1 can of Corn Beef, put in the same bowl & mash fully with the already mashed potato. Ad in the salt & pepper & mix well. Then form into roll balls in the palm of your hand & flatten a bit. You may fry them in a lager frying pan on low to medium heat or you may also bake them in a pre-heated oven at 350F for 10 to 15 mins. Baking them not only helps them keep there shape but adds a nice crispy coating to them.

Step 2Cut up the chicken breast into cubes. Add them to a pre-heated frying pan over medium heat. Add in the salt, pepper, minced garlic & the bay leaf. Brown for a few mins then add in the vinaigrette & water. Let simmer for about 10 more mins.
