1Boil the potatoes until fork will go easy go in. Let cool for a bit. Then peel off the skin, place in medium bowl & then mash up with a potato masher. Open 1 can of Corn Beef, put in the same bowl & mash fully with the already mashed potato. Ad in the salt & pepper & mix well. Then form into roll balls in the palm of your hand & flatten a bit. You may fry them in a lager frying pan on low to medium heat or you may also bake them in a pre-heated oven at 350F for 10 to 15 mins. Baking them not only helps them keep there shape but adds a nice crispy coating to them.
2Cut up the chicken breast into cubes. Add them to a pre-heated frying pan over medium heat. Add in the salt, pepper, minced garlic & the bay leaf. Brown for a few mins then add in the vinaigrette & water. Let simmer for about 10 more mins.
