Pork Fried Rice

A great way to use up leftover pork roast! You could also substitute chicken or beef.

leftover pork roast, diced
1 1/2 c
white rice, cooked and chilled
6 Tbsp
butter, softened
2 Tbsp
soy sauce
1 clove
garlic, minced
2 (more) Tbsp
soy sauce
green onions, sliced
1 Tbsp
olive oil (or oil of your choice)
1/2 lb
mushrooms, sliced
broccoli florets
zucchini slices
carrots, grated
2 Tbsp
rice wine vinegar

How to Make Pork Fried Rice


  • 1Make ahead and chill for easy assembly: pork roast, rice, and garlic/soy butter.
  • 2To make garlic/soy butter: Whip 2 tbsp. soy sauce and minced garlic with softened butter. Chill to use later.
  • 3In a saute pan heat olive oil. Add green onions and vegetables. Sprinkle rice wine vinegar over vegetables and saute 5 minutes over med-high heat until just starting to soften.
  • 4Heat an electric frying pan, wok, or large saute pan. Add cold rice, pork, and vegetables. Dot garlic/soy butter around the rice. Add remaining 2 tbsp. soy sauce. Cook 10-15 minutes, turning often until rice is browned slightly and vegetables are cooked to your liking.
