Ingredients
- 2 cups leftover pork roast, diced
- 1 1/2 cups white rice, cooked and chilled
- 6 tablespoons butter, softened
- 2 tablespoons soy sauce
- 1 clove garlic, minced
- 2 (more) tablespoons soy sauce
- 3 - green onions, sliced
- 1 tablespoon olive oil (or oil of your choice)
- 1/2 pound mushrooms, sliced
- - broccoli florets
- - zucchini slices
- 2 - carrots, grated
- 2 tablespoons rice wine vinegar
How To Make pork fried rice

Step 1Make ahead and chill for easy assembly: pork roast, rice, and garlic/soy butter.

Step 2To make garlic/soy butter: Whip 2 tbsp. soy sauce and minced garlic with softened butter. Chill to use later.

Step 3In a saute pan heat olive oil. Add green onions and vegetables. Sprinkle rice wine vinegar over vegetables and saute 5 minutes over med-high heat until just starting to soften.

Step 4Heat an electric frying pan, wok, or large saute pan. Add cold rice, pork, and vegetables. Dot garlic/soy butter around the rice. Add remaining 2 tbsp. soy sauce. Cook 10-15 minutes, turning often until rice is browned slightly and vegetables are cooked to your liking.
