poppy seed chicken -and some for freezer
This makes 4 casseroles. Yummy recipe that began as a fundraiser for my kids pre-school. Each parent was given the recipe and the disposable containers. After making and freezing, they were sold and were a major hit and great fundraiser.

makes 4- 32 oz. casseroles
Ingredients
- 4 pounds chicken breasts, boneless and skinless, cooked
- 32 ounces sour cream
- 4 boxes prepared rice-a roni
- 4 packages ritz crackers crumbled
- 2 cups butter, melted
- 4 tablespoons poppyseeds
- 4 cans cream of celery soup

Step 1cut cooked chicken into 1 1/2 inch pieces, or shread.

Step 2Prepare Rice a roni, and Divide into 4 casserole dishes or disposable pans.

Step 3combine soup, chicken and sour cream. Layer on top of Rice a Roni.

Step 4Combine cracker crumbs and butter, then divide between the casseroles and put on top. sprinkle with poppy seeds.

Step 5Either FREEZE , or Bake 350 covered, then uncover and cook 15 minutes more. MAKES 4 CASSEROLES
