can tomato sauce
1/2 c
picante sauce
1 tsp
ground cumin
1/2 tsp
garlic salt
1/2 tsp
oregano, crushed
whole chicken breasts, boned, skinned, split
salt and pepper to taste
medium onions, peeled and quartered
2 Tbsp
vegetable oil
2 c
zucchini, cut into 1/2 inch cubes

How to Make Pollo Raphael


  • 1Combine tomato sauce, picante sauce, cumin, garlic salt and oregano; mix well.
  • 2Cut chicken into 1" pieces; sprinkle with salt and pepper.
  • 3Cook chicken and onions in oil in large skillet over medium heat, stirring frequently, until chicken is lightly browned and almost cooked through, about 5 to 7 minutes.
  • 4Stir tomato sauce mixture into skillet; mix well.
  • 5Stir in zucchini.
  • 6Cover and simmer 5 minutes.
  • 7Uncover; cook and stir about 1 minute to thicken sauce, if necessary.
  • 8Serve with additional picante sauce.
