  • 8 oz
    can tomato sauce
  • 1/2 c
    picante sauce
  • 1 tsp
    ground cumin
  • 1/2 tsp
    garlic salt
  • 1/2 tsp
    oregano, crushed
  • 2
    whole chicken breasts, boned, skinned, split
  • ·
    salt and pepper to taste
  • 2
    medium onions, peeled and quartered
  • 2 Tbsp
    vegetable oil
  • 2 c
    zucchini, cut into 1/2 inch cubes

How to Make Pollo Raphael

Step-by-Step

  1. Combine tomato sauce, picante sauce, cumin, garlic salt and oregano; mix well.
  2. Cut chicken into 1" pieces; sprinkle with salt and pepper.
  3. Cook chicken and onions in oil in large skillet over medium heat, stirring frequently, until chicken is lightly browned and almost cooked through, about 5 to 7 minutes.
  4. Stir tomato sauce mixture into skillet; mix well.
  5. Stir in zucchini.
  6. Cover and simmer 5 minutes.
  7. Uncover; cook and stir about 1 minute to thicken sauce, if necessary.
  8. Serve with additional picante sauce.
