Ingredients

  • 8 ounces can tomato sauce
  • 1/2 cup picante sauce
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon oregano, crushed
  • 2 whole chicken breasts, boned, skinned, split
  • salt and pepper to taste
  • 2 medium onions, peeled and quartered
  • 2 tablespoons vegetable oil
  • 2 cups zucchini, cut into 1/2 inch cubes

How To Make pollo raphael

  • Step 1
    Combine tomato sauce, picante sauce, cumin, garlic salt and oregano; mix well.
  • Step 2
    Cut chicken into 1\" pieces; sprinkle with salt and pepper.
  • Step 3
    Cook chicken and onions in oil in large skillet over medium heat, stirring frequently, until chicken is lightly browned and almost cooked through, about 5 to 7 minutes.
  • Step 4
    Stir tomato sauce mixture into skillet; mix well.
  • Step 5
    Stir in zucchini.
  • Step 6
    Cover and simmer 5 minutes.
  • Step 7
    Uncover; cook and stir about 1 minute to thicken sauce, if necessary.
  • Step 8
    Serve with additional picante sauce.
