Pizza Stuffed Chicken

I'm in my creative mood today. I took out some chicken breast and was looking in my fridge looking around and saw some pizza sauce, pepperoni & green peppers and so I thought up this recipe. Hope you like it and try it with your family. (Picture doesn't give it justice)

  • 4
    whole chicken breasts
  • 4 Tbsp
    olive oil
  • 2 clove
    crushed garlic
  • 1/4 c
    parmesan cheese
  • 1 tsp
    powdered garic
  • 1 c
    italian bread crumbs
  • ·
    salt & pepper
  • 1-2 c
    shredded mozzarella cheese or fresh sliced
  • 36 slice
    pepperoni, small, sliced
  • 1/2 c
    green peppers, sliced
  • 1/2 c
    onion, sliced
  • ·
    mushrooms (optional)
  • ·
    pizza sauce, to dip
  • ·
    ***add what ever toppings you want

How to Make Pizza Stuffed Chicken


  1. Cut a pocket in each chicken breast. In a small bowl put 2 tbs of oil and crushed garlic. Let set a few minutes for flavors to incorporate. In a dish combine bread crumbs, parmesan cheese, italian seasoning, and garlic powder &salt & pepper. Mix well together. In another bowl whisk 2 eggs, set aside.
  2. Inside pocket of chicken smear garlic and oil mixture. Lay slices of pepperoni, green pepper, onion & cheese. Fold over and secure with toothpicks. Do this with remaining chicken breasts.
  3. Dip each chicken breast in egg mixture then bread crumbs. Do the remaining chicken the same way. Add 2 remaining tbsp of oil to large fry pan and brown. Remove chicken onto a baking sheet and cook for 45 minutes to 1 hr on 375F.
  4. Remove chicken and let rest for a few minutes. Use hot pizza sauce to dip or you can pour over chicken.
  5. ***This is a very versatile recipe. Other suggestions: ground sausage, mushrooms, ham, bacon, hamburger...really anything you would get on a pizza.
