pistachio and honey chicken

Sweet and Savory....a combination I love. But definitely not too sweet. I've used chicken cutlets before to eliminate the first step.

Ingredients
- 4 chicken breast halves, boneless and skinless
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/2 teaspoon pepper
- 2 tablespoons butter, melted
- 1/4 cup dry sherry
- 1 tablespoon honey
- 1/2 teaspoon cornstarch
- 1/4 cup chicken broth
- 2 tablespoons pistachios, coarsely chopped
How To Make pistachio and honey chicken

Step 1Place the chicken between 2 sheets of wax paper. Flatten to 1/4 inch thickness, using a meat mallet or rolling pin. Set aside.

Step 2Combine the flour and the next 3 ingredients; stir well. Dredge the chicken in the flour mixture.

Step 3Heat a large skillet over medium heat. Add butter. Brown the chicken in the butter for 5 minutes on each side. Add the sherry, and cook over medium-high heat for 1 minute. Stir in the honey.

Step 4Combine the cornstarch and broth; add to the skillet, and cook over medium heat, stirring constantly, until mixture is slightly thickened.

Step 5Remove the chicken to a serving platter; top with the sauce, and sprinkle with the pistachios. Serve immediately.
