Pineapple Ginger Chicken

I had a recipe years ago when I was first married for Pineapple Chicken. I modified it slightly and have been preparing this recipe ever since. It's a hit with my family!

When you're tired of the same chicken dishes, try this one! It's refreshingly different.

Very good served with rice, and a sprinkle or two of soy sauce, if desired.

  • 3 lb
    chicken, cut up and skinless
  • 1 can(s)
    crushed pineapple (in juice)
  • 1 tsp
    soy sauce
  • 2 Tbsp
    onion (minced)
  • 1/2 tsp
  • 2 Tbsp
    orange juice
  • 2 tsp
  • 1/8 tsp
    ginger (ground)

How to Make Pineapple Ginger Chicken


  1. Preheat oven to 375 degrees.
  2. Mix together undrained pineapple, soy sauce, onion and salt. Pour over chicken in a prepared baking dish.
  3. Bake for 50-60 minutes, uncovered, basting halfway through cooking time and when removed from oven.
  4. Place chicken on platter and skim fat from pan.
  5. Mix together 1/2 cup pan juices, orange juice, cornstarch and ginger. Cook and stir until thickened.
  6. Serve over chicken.
