pineapple ginger chicken
I had a recipe years ago when I was first married for Pineapple Chicken. I modified it slightly and have been preparing this recipe ever since. It's a hit with my family! When you're tired of the same chicken dishes, try this one! It's refreshingly different. Very good served with rice, and a sprinkle or two of soy sauce, if desired.

Ingredients
- 3 pounds chicken, cut up and skinless
- 1 can crushed pineapple (in juice)
- 1 teaspoon soy sauce
- 2 tablespoons onion (minced)
- 1/2 teaspoon salt
- 2 tablespoons orange juice
- 2 teaspoons cornstarch
- 1/8 teaspoon ginger (ground)
How To Make pineapple ginger chicken

Step 1Preheat oven to 375 degrees.

Step 2Mix together undrained pineapple, soy sauce, onion and salt. Pour over chicken in a prepared baking dish.

Step 3Bake for 50-60 minutes, uncovered, basting halfway through cooking time and when removed from oven.

Step 4Place chicken on platter and skim fat from pan.

Step 5Mix together 1/2 cup pan juices, orange juice, cornstarch and ginger. Cook and stir until thickened.

Step 6Serve over chicken.
