pineapple ginger chicken

I had a recipe years ago when I was first married for Pineapple Chicken. I modified it slightly and have been preparing this recipe ever since. It's a hit with my family! When you're tired of the same chicken dishes, try this one! It's refreshingly different. Very good served with rice, and a sprinkle or two of soy sauce, if desired.

Ingredients

  • 3 pounds chicken, cut up and skinless
  • 1 can crushed pineapple (in juice)
  • 1 teaspoon soy sauce
  • 2 tablespoons onion (minced)
  • 1/2 teaspoon salt
  • 2 tablespoons orange juice
  • 2 teaspoons cornstarch
  • 1/8 teaspoon ginger (ground)

How To Make pineapple ginger chicken

  • Step 1
    Preheat oven to 375 degrees.
  • Step 2
    Mix together undrained pineapple, soy sauce, onion and salt. Pour over chicken in a prepared baking dish.
  • Step 3
    Bake for 50-60 minutes, uncovered, basting halfway through cooking time and when removed from oven.
  • Step 4
    Place chicken on platter and skim fat from pan.
  • Step 5
    Mix together 1/2 cup pan juices, orange juice, cornstarch and ginger. Cook and stir until thickened.
  • Step 6
    Serve over chicken.
