Ingredients
- 5-6 - chicken thighs
- 5-6 slices pineapple, with the juice
- 1 green bell pepper, slivered
- 2 tablespoons ginger, fresh, peeled & chopped
- 1 teaspoon coriander seed, ground
- 1 tablespoon parsley, fresh, chopped
- 1 - lime, juiced
- 1/2 cup flour
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon chili powder
- 1/4 pound bacon, diced (or 1/4 cup bacon fat)
- 3 tablespoons butter
- 1/4 cup white wine
- - salt & pepper
How To Make pineapple ginger chicken

Step 1In a processor, place pineapple juice, ginger, coriander, parsley & lime juice. Pulse several times to purée. Strain out the solids & discard, reserving the juice.

Step 2Add bacon fat in a pan, or fry bacon to render fat, then remove bacon pieces from pan. (NOTE: you will not necessarily need the bacon for this recipe, but you can sprinkle over the chicken as a garnish).

Step 3In a bowl, mix the flour, cayenne & chili powder. Tenderize the chicken (you can use half breasts pounded into patties). Season with salt & pepper. Then lightly dredge the chicken in the dry flour mixture.

Step 4Fry the chicken in bacon fat to brown on both sides. When almost completely browned, add slivered green pepper. Sauté until tender.

Step 5Deglaze the pan with the white wine. Add butter & juices. Top each piece of chicken with a pineapple slice. Simmer until chicken is cooked through.
