Ingredients

  • 5-6 - chicken thighs
  • 5-6 slices pineapple, with the juice
  • 1 green bell pepper, slivered
  • 2 tablespoons ginger, fresh, peeled & chopped
  • 1 teaspoon coriander seed, ground
  • 1 tablespoon parsley, fresh, chopped
  • 1 - lime, juiced
  • 1/2 cup flour
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon chili powder
  • 1/4 pound bacon, diced (or 1/4 cup bacon fat)
  • 3 tablespoons butter
  • 1/4 cup white wine
  • - salt & pepper

How To Make pineapple ginger chicken

  • Step 1
    In a processor, place pineapple juice, ginger, coriander, parsley & lime juice. Pulse several times to purée. Strain out the solids & discard, reserving the juice.
  • Step 2
    Add bacon fat in a pan, or fry bacon to render fat, then remove bacon pieces from pan. (NOTE: you will not necessarily need the bacon for this recipe, but you can sprinkle over the chicken as a garnish).
  • Step 3
    In a bowl, mix the flour, cayenne & chili powder. Tenderize the chicken (you can use half breasts pounded into patties). Season with salt & pepper. Then lightly dredge the chicken in the dry flour mixture.
  • Step 4
    Fry the chicken in bacon fat to brown on both sides. When almost completely browned, add slivered green pepper. Sauté until tender.
  • Step 5
    Deglaze the pan with the white wine. Add butter & juices. Top each piece of chicken with a pineapple slice. Simmer until chicken is cooked through.
