Ingredients For pineapple chicken stir-fry

  • 1/4 c
    soy sauce
  • 2 Tbsp
    granulated sugar
  • 1 Tbsp
    white vinegar
  • 1 Tbsp
    ketchup
  • 1/2 tsp
    ground ginger
  • 2 clove
    garlic, minced
  • 1 lb
    boneless skinless chicken breasts, cut into strips
  • 2 Tbsp
    vegetable oil
  • 1 pkg
    frozen stir-fry vegetables (16 oz)
  • 1 can
    unsweetened pineapple chunks, drained (8 oz)
  • hot cooked rice of your choice

How To Make pineapple chicken stir-fry

    For the sauce, combine the soy sauce, sugar, vinegar, ketchup, ground ginger, and minced garlic in a bowl. Set aside.

    In a large skillet or wok, fry chicken in oil for 5-6 minutes or until juices run clear.

    Add the vegetables; stir-fry for 3-4 minutes or until crisp yet tender.

    Stir in the pineapple and the reserved soy sauce mixture; heat through.

    Serve the stir-fry over the rice of your choice.
