Ingredients
- 4 bone in skin on chicken thighs
- salt and pepper
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/2 cup ketchup
- 1/2 cup dark brown sugar
- 1/4 cup chicken stock
- 2 tablespoons ginger, minced
- 2 cloves garlic, minced
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 1 1/2 tablespoons cold water
- fresh pineapple chunks, to garnish
- scallions, to garnish
How To Make pineapple chicken

Step 1Season the chicken with salt and pepper and place in a baking dish. Preheat the oven to 375 degrees F.

Step 2In a saucepan, add all the ingredients except the cornstarch, water, and garnishes. Cook for about 10 minutes. Mix the cornstarch and water together and add to the sauce once it is boiling to thicken.

Step 3Pour the sauce over the chicken. Cover with foil and roast in the oven for 45 minutes. Remove the foil and bake another 10 minutes.

Step 4Remove the chicken thighs to a plate and stir in the pineapple chunks. Serve the sauce over the chicken garnished with the scallions.
