pineapple chicken
I recently saw an idea for cooking chicken or pork in pineapple salsa. That sounded good to me, so I added pineapple salsa to a list of food to find. Finally, I found it at Trader Joe's. Using a method I have long used for cooking chicken in a skillet with water, (https://www.justapinch.com/recipes/main-course/chicken/weight-watchers-fried-chicken.html?r=41), I formulated this recipe. When I tasted the salsa alone, I knew I needed to tone down its flavors, so I added the pineapple tidbits and honey. The result was tasty!!

Ingredients
- 2 bone-in chicken breasts, skinned
- 12 ounces pineapple salsa
- 1/2 cup water
- 1 teaspoon seasoned salt
- 1 cup pineapple tidbits
- 2 tablespoons honey
How To Make pineapple chicken

Step 1In a skillet with a lid, add the pineapple salsa and water.

Step 2Rub the seasoned salt over the skinned chicken breasts and place them into the salsa and water. Add the pineapple and honey.

Step 3Cover the skillet tightly with the lid and cook over over medium low heat for 30 minutes.

Step 4Turn chicken pieces over, recover with lid, and cook 15 more minutes on medium low heat. Check that the chicken's internal temperature is at least 165 degrees.

Step 5Remove chicken from the sauce, cover and let set covered 10 minutes. Remove bones and slice breast if desired. Serve the meat over cooked rice and spoon pineapple mixture from the skillet over the chicken.
