I got this recipe from Maui Electric consumer Services Dept years and years ago. Its good with a side of chow mein noodles. or rice. I make this for family get togethers and potlucks.

Ingredients
- 2 pounds boneless chicken breasts
- 1/2 cup cornstarch
- 1/4 teaspoon salt
- 1 - egg
- 1/2 teaspoon shoyu sauce (soy sauce)
- 2 cups oil for frying
- 1 can (13 1/4 oz) pineapple chunks
- 3/4 cup pineapple juice
- 2 tablespoons brown sugar
- 1/3 cup catsup
- dash hot pepper sauce
- 1 1/2 tablespoons cornstarch
- 2 tablespoons water
- 1/2 cup cubed green peppers
- 1/2 cup sliced carrots
How To Make pineapple chicken

Step 1Cut chicken into 1-inch pieces. Mix with cornstarch, 1/2 teaspoon salt,egg and shoyu sauce. In a wok, heat oil to 375*. Fry chicken until golden brown; drain on paper towels. Drain pineapple chunks, reserving liquid. In a saucepan, combine reserved liquid with the juice , the remaining 1/4 teaspoon salt, brown sugar, catsup,and hot pepper sauce; bring to a boil. Mix the cornstarch with water; stir into hot mixture. Cook until mixture thickens, stirring constantly. Add the pineapple chunks,green pepper, carrots and the chicken. Cook gently 2-3 minutes.
