I don't remember where I got this recipe, I have had it for about 14yrs. My daughter renamed it, Pinch Chicken, because she eats it with a tortilla and no silverware.

Ingredients
- 8 - 10 - pieces of chicken, cleaned and patted dry
- 1 - large can of refried beans
- 1 - large can of green enchilada sauce
- 1 - 2 cups - grated monterey jack cheese
- 1 - envelope of taco seasoning
How To Make pinch chicken

Step 1Spread refried beans in a 9 x 13 baking dish

Step 2Place chicken pieces on top of refried beans and sprinkle with all the taco seasoning.

Step 3Mix cheese and enchilada sauce in a small bowl, and spoon over chicken.

Step 4Bake at 350 for 1 hour, serve with salad and warm flour tortillas.
