How to Make Pimiento Chicken
1Heat butter in heavy skillet. Add chicken, sprinkle with salt and paprika, and brown on both sides.
Lower heat, add mushrooms, and saute about 5 minutes.
2Stir in onions.
In a small bowl, mix flour with small amount of broth, stir till smooth.
Add flour and broth to chicken in pan. Bring to a boil.
Lower heat and simmer, covered, 30 minutes.
3Stir in the cream, pimientos, and parsley, and simmer 5 minutes more.
(*Nuts...i forgot the parsley)
4Stir and serve, ladling sauce over chicken.
5Good served over hot noodles. I like to serve green peas on the side, which go nicely with the mushroom cream sauce..
