Ingredients

butter

salt
1/2 tsp
paprika
mushrooms, sliced
2 Tbsp
flour
1 small
onion, chopped
2 c
chicken broth
1/2 c
half & half
1 jar(s)
pimientos (4 oz), chopped
1 Tbsp
parsley, chopped
hot cooked noodles

How to Make Pimiento Chicken

Step-by-Step

  • 1Heat butter in heavy skillet. Add chicken, sprinkle with salt and paprika, and brown on both sides.
    Lower heat, add mushrooms, and saute about 5 minutes.
  • 2Stir in onions.
    In a small bowl, mix flour with small amount of broth, stir till smooth.
    Add flour and broth to chicken in pan. Bring to a boil.
    Lower heat and simmer, covered, 30 minutes.
  • 3Stir in the cream, pimientos, and parsley, and simmer 5 minutes more.
    (*Nuts...i forgot the parsley)
  • 4Stir and serve, ladling sauce over chicken.
  • 5Good served over hot noodles. I like to serve green peas on the side, which go nicely with the mushroom cream sauce..
