Ingredients For pesto rice stuffed boneless chicken thighs

  • 1 c
    instant rice
  • 4
    boneless skinless chicken thighs, pounded to be a bit more uniformed
  • salt and pepper, to taste
  • paprika
  • splash
    olive oil
  • 1/4 c
    pesto (store bought or homemade)

How To Make pesto rice stuffed boneless chicken thighs

    Preheat the oven to 400 degrees F. Cook the rice according to package directions. Season the chicken with the salt, pepper and paprika. Rub a splash of oil all over chicken.

    Mix the rice with the pesto. Lay 2 chicken thighs side by side in a baking dish. Top each evenly with rice pesto. Lay the other two chicken thighs on top of the rice.

    Bake about 20 minutes.
