Another great idea for chicken. The pan drippings are so amazing good I sometimes deglaze and make a rue with a bit of wine and some chicken broth. This is the kind of recipe that demands not wasting a drop of the goodness!

Ingredients

  • 1
    chicken breasts, boneless and skinless
  • 1/2 c
    chopped mushrooms
  • 1/2 c
    diced red onion
  • 1 - 2 slice
    pepper jack cheese
  • 2 - 3 dash(es)
    garlic salt, salt, pepper

How to Make Kitty's Pepper jack Chicken Saute'

Step-by-Step

  1. Saute' chicken breasts in a little olive oil in a warm skillet
  2. cook on medium high heat till done on one side then turn
  3. top with diced onion, and chopped mushroom. Cover and let cook till vegetables are slightly tender
  4. Sprinkle with salt, pepper and garlic powder
  5. Top each breast with 1 - 2 cheese slices
  6. Plate the chicken and top it with all the pan drippings
  7. THESE MEASUREMENTS ARE FOR EACH CHICKEN BREAST. BE SURE TO USE A LARGE ENOUGH PAN WHEN MAKING SEVERAL AT A TIME SO THE ONIONS AND MUSHROOMS CAN CARMELIZE
