Another great idea for chicken. The pan drippings are so amazing good I sometimes deglaze and make a rue with a bit of wine and some chicken broth. This is the kind of recipe that demands not wasting a drop of the goodness!

Ingredients
- 1 - chicken breasts, boneless and skinless
- 1/2 cup chopped mushrooms
- 1/2 cup diced red onion
- 1 - 2 slices pepper jack cheese
- 2 - 3 dashes garlic salt, salt, pepper

Step 1Saute' chicken breasts in a little olive oil in a warm skillet

Step 2cook on medium high heat till done on one side then turn

Step 3top with diced onion, and chopped mushroom. Cover and let cook till vegetables are slightly tender

Step 4Sprinkle with salt, pepper and garlic powder

Step 5Top each breast with 1 - 2 cheese slices

Step 6Plate the chicken and top it with all the pan drippings
