Another great idea for chicken. The pan drippings are so amazing good I sometimes deglaze and make a rue with a bit of wine and some chicken broth. This is the kind of recipe that demands not wasting a drop of the goodness!

Ingredients

  • 1 - chicken breasts, boneless and skinless
  • 1/2 cup chopped mushrooms
  • 1/2 cup diced red onion
  • 1 - 2 slices pepper jack cheese
  • 2 - 3 dashes garlic salt, salt, pepper

How To Make kitty's pepper jack chicken saute'

  • Step 1
    Saute' chicken breasts in a little olive oil in a warm skillet
  • Step 2
    cook on medium high heat till done on one side then turn
  • Step 3
    top with diced onion, and chopped mushroom. Cover and let cook till vegetables are slightly tender
  • Step 4
    Sprinkle with salt, pepper and garlic powder
  • Step 5
    Top each breast with 1 - 2 cheese slices
  • Step 6
    Plate the chicken and top it with all the pan drippings
  • Step 7
    THESE MEASUREMENTS ARE FOR EACH CHICKEN BREAST. BE SURE TO USE A LARGE ENOUGH PAN WHEN MAKING SEVERAL AT A TIME SO THE ONIONS AND MUSHROOMS CAN CARMELIZE
