Ingredients

  • 4 - chicken breast halves, skinless and boneless
  • 2 - egg whites
  • 2 teaspoons cornstarch
  • 2 tablespoons lemon juice, fresh
  • 1 cup panko bread crumbs
  • 1 tablespoon parsley
  • 2 teaspoons kosher salt
  • 1/4 teaspoon pepper
  • - zest of 1 lemon
  • 1 cup pecans, crushed

How To Make pecan crusted chicken

  • Step 1
    Preheat oven to 450.
  • Step 2
    Blend egg whites, cornstarch and lemon (dipping mixture).
  • Step 3
    Combine remaining ingredients (crusting mixture).
  • Step 4
    Dip chicken breast in dipping mixture and then in crusting mixture.
  • Step 5
    Saute chicken in oil in a skillet over medium-high heat until golden brown and crisp.
  • Step 6
    Turn and brown on other side place on sheet pan and roast in oven until done about 8 minutes.
  • Step 7
    Test with meat thermometer until 165 degrees.
