  • 4
    chicken breast halves, skinless and boneless
  • 2
    egg whites
  • 2 tsp
    cornstarch
  • 2 Tbsp
    lemon juice, fresh
  • 1 c
    panko bread crumbs
  • 1 Tbsp
    parsley
  • 2 tsp
    kosher salt
  • 1/4 tsp
    pepper
  • ·
    zest of 1 lemon
  • 1 c
    pecans, crushed

How to Make Pecan Crusted Chicken

Step-by-Step

  1. Preheat oven to 450.
  2. Blend egg whites, cornstarch and lemon (dipping mixture).
  3. Combine remaining ingredients (crusting mixture).
  4. Dip chicken breast in dipping mixture and then in crusting mixture.
  5. Saute chicken in oil in a skillet over medium-high heat until golden brown and crisp.
  6. Turn and brown on other side place on sheet pan and roast in oven until done about 8 minutes.
  7. Test with meat thermometer until 165 degrees.
