peanut sauce chicken
This is one of my favorite recipes, it´s 100% mexican, family meal and traditional. You need to eat this delicious dish with fresh hand made corn tortillas. (I owe you the photos, I couldn´t find them)

Ingredients
- 5 large chicken pieces, boiled and cooked (with salt and onion)
- 3 medium ancho chiles, boiled
- 2 medium guajillo chiles, boiled
- 2 large red tomatoes, roasted and peeled
- 1/2 small roasted onion
- 2 cloves roasted garlic
- 2 - clove
- 2 - black pepper
- 1 teaspoon grounded thyme
- 1 teaspoon grounded marjoram
- 2 large laurel leaves
- 1/2 cup roasted peanuts (natural, not salted)
- As needed - salt
- As needed - pepper
- As needed - vegetable oil
- As needed - chicken broth or water
How To Make peanut sauce chicken

Step 1Place in the blender: ancho chile, guajillo chile, tomatoes, onion, garlic, all the spices and peanuts. You´ll see a thick sauce. If it looks difficult to blend, add a bit of chicken broth or water.

Step 2In a casserole, put some vegetable oil and add the sauce, it has to be thick and smooth, add water or chicken broth as needed (if so), and bring it to boil.

Step 3Add the cooked chicken pieces in the sauce, and let them season for 5 minutes while the sauce is boiling.

Step 4You can serve the chicken with white rice.
