This is one of my favorite recipes, it´s 100% mexican, family meal and traditional. You need to eat this delicious dish with fresh hand made corn tortillas. (I owe you the photos, I couldn´t find them)

Ingredients

  • 5 large chicken pieces, boiled and cooked (with salt and onion)
  • 3 medium ancho chiles, boiled
  • 2 medium guajillo chiles, boiled
  • 2 large red tomatoes, roasted and peeled
  • 1/2 small roasted onion
  • 2 cloves roasted garlic
  • 2 - clove
  • 2 - black pepper
  • 1 teaspoon grounded thyme
  • 1 teaspoon grounded marjoram
  • 2 large laurel leaves
  • 1/2 cup roasted peanuts (natural, not salted)
  • As needed - salt
  • As needed - pepper
  • As needed - vegetable oil
  • As needed - chicken broth or water

How To Make peanut sauce chicken

  • Step 1
    Place in the blender: ancho chile, guajillo chile, tomatoes, onion, garlic, all the spices and peanuts. You´ll see a thick sauce. If it looks difficult to blend, add a bit of chicken broth or water.
  • Step 2
    In a casserole, put some vegetable oil and add the sauce, it has to be thick and smooth, add water or chicken broth as needed (if so), and bring it to boil.
  • Step 3
    Add the cooked chicken pieces in the sauce, and let them season for 5 minutes while the sauce is boiling.
  • Step 4
    You can serve the chicken with white rice.
